Easy Greek Salad Dressing

This easy Greek salad dressing is delicious and easy to make. It’s great for vegetable salad, pasta salad, a bowl or a wrap.

There is nothing like a quick and easy Greek salad dressing to make your meal extra tasty. It’s a very versatile dressing so don’t let the name narrow you down to only a Greek salad.

Traditional Greek salad dressing is a vinaigrette, but we skipped the vinegar for this recipe. Sometimes less is more and I find that vinegar is not necessary to get the perfect flavour.

This, of course, is a personal preference so we’ve provided the option to add it in the recipe below.

This recipe is creamy but healthy because we leverage Dijon mustard to get just the right consistency.

Preparing Greek Salad Dressing

Ingredients

Olive oil: I use olive oil for this recipe because of its mild flavour. Olive oil is the fat extracted from olives. The least processed is extra virgin olive oil, which I use in this recipe.

Garlic: Garlic is a bulb that is edible and is grown in soil. Though the green shoots it sprouts, called garlic scapes, are also edible, we are referring to the actual bulb that the scapes grow from.  Garlic bulbs are made up of multiple cloves and depending on the variety you may have anywhere from 4 to 10 cloves, if not more. This is important to know because recipes will often call for a specific number of cloves which can vary in size greatly.

Dried oregano: Oregano is a plant from the mint family. It’s used as s herb and has a very potent flavour. Dried oregano is the leaves of a fresh plant that has been air-dried.

Dijon mustard: Made from spicy brown and black mustard seeds it is the perfect way to give any meal a little kick. It has a tangy sharp taste that some consider being spicy.

How to Make Easy Greek Salad Dressing

Peel the garlic, and that’s pretty well all the prep.

Add all of the ingredients to a small bowl or a measuring jug. Stir to combine and serve.

If you have the option, let it sit for at least a half hour before serving to let all the flavours marry.

TIP: The longer the dressing sits the better it will taste. The flavour will combine, the herbs will soften. 

Storing Greek Salad Dressing

 

Store this dressing in an air-tight container. It will store well at room temperature for a couple of days or in the fridge for up to a week.

If you do keep it in the fridge, you will need to take it out at least 30 minutes before use as the oil will solidify.

Serving Easy Greek Salad Dressing

Greek salad dressing is obviously delicious

on a Greek salad. But that’s not all!

It’s actually delicious on any salad or bowl. It has a herb and lemon flavour that is relatively mild so it pairs beautifully with most, if not all veggies.

It’s also great as a marinade for chicken. Cut the chicken into cubes, marinate in this easy Greek salad dressing for at least 30 minutes, and up to 2 hours, and grill.

Ingredients
 
 

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove
  • ¼ tsp salt
  • tsp pepper
  • ½ tbsp dried oregano
  • 1 tsp Dijon mustard
  • 2 tsp red wine vinegar (optional)

Instructions
 

  • Peel the garlic and press it using a garlic press.

  • In a small bowl or measuring jug, combine all of the ingredients and stir well.
    ¼ cup olive oil, 2 tbsp lemon juice, ¼ tsp salt, 1/8 tsp pepper, ½ tbsp dried oregano, 1 tsp Dijon mustard, 2 tsp red wine vinegar
  • Let sit for 30 minutes before serving for best results.
