A simple Caesar salad wrap makes an excellent and quick lunch. It’s also a great on-the-go meal.
I love a simple lunch and these chicken Caesar wraps are just that. They are full of flavour and contain very simple ingredients making them very affordable.
You can easily use our baked chicken Caesar salad recipe and turn it into a wrap, but you need a bit more time.
Since we use ready-made rotisserie chicken for this recipe it whips up really fast, and who doesn’t love that?
Preparing Chicken Caesar Salad Wraps
Ingredients
Rotisserie chicken: A whole chicken that has been cooked on a rotisserie where it is spun directly in front of the heat source. The constant rotation of the rotisserie ensures very evenly baked chicken and most importantly skin. Flavours vary depending on what seasoning is added to the chicken before roasting.
Tortillas: I use 7-inch white flour tortillas for most of my wraps. The flavour is not overwhelming and the wraps are easy to roll to enclose all the ingredients. If you like your wraps grilled it also toasts very nicely on a pan or a panini press.
Romaine Lettuce: This type of lettuce has the perfect crunch for Caesar salad. Surprisingly this lettuce brings fiber, Vitamins C, K and A as well as iron and calcium.
G&K Homemade Caesar Salad Dressing: Our Caesar dressing is made with mayonnaise, parmesan and garlic. It whips up in no time at all and is essential to the flavour of this dish.
How to Make Chicken Caesar Salad Wraps
As always, we are using very simple ingredients and using them in very simple, but delicious, ways.
Step 1: Prep the Chicken
First, you want to remove the meat off the bones of half a ready-made rotisserie chicken. I buy a whole chicken and use the other half to make smoky chicken tacos, messy chicken sandwiches, or our easy buffalo chicken wraps.
Chop the chicken into small pieces and set aside.
Step 2: Make the Caesar Dressing
Once the chicken is ready, make the salad dressing. Combine the mayonnaise, garlic and parmesan. I like to do this in the bottom of the salad bowl. This reduces the number of dishes.
Step 3: Wash and Dry the Lettuce
Now, chop the head of romaine lettuce. I essentially slice the head of lettuce into about 1/2 inch ‘slices’ all the way down to the crunchy bits. Those are my kids’ favourite. Discard the root and very bottom (where it turns all white).
If you have a salad spinner:
Place the lettuce into the salad spinner and fill with water. Let it sit for a minute or two and stir gently to remove any extra dirt.
Take the basket part of the spinner out and discard the water. Give the lettuce in the basket one more quick rinse under cold running water. Put the basket with the lettuce back in the spinner outer bowl and spin dry. The more water you have left on your lettuce the more it will
dilute the caesar dressing. This will make the dressing less flavourful and less creamy. If you don’t have a salad spinner:
Use either a bowl or your sink to soak the lettuce. Drain, rinse once more, then shake out and pat dry with a tea towel. If you have time you can also let the lettuce air dry a little on a tea towel.
Step 4: Make the Salad
Once the lettuce is dry, add it to the bowl with the dressing and toss to coat the lettuce evenly. I like to leave the lettuce slightly damp for this recipe to make the dressing more runny.
The extra moisture is a good balance to the wrap.
Step 5: Wrap it up!
Last but not least, it’s time to make the wrap.
Divide the chicken and salad evenly among 4 wraps and enjoy!
Substitutions
Rotisserie chicken: There are other easy options if you don’t like rotisserie chicken. For example, our local grocery store sells the best ready-made chicken fingers that you can add to these wraps instead.
If going to the store is not an option you can try any one of the following alternatives:
- Bake chicken breast/thighs in the oven
- Bake frozen chicken fingers or chicken nuggets
- Use left-over takeout chicken nuggets
- Bake frozen popcorn chicken
- Cook frozen chicken burgers and cut them into small pieces
Serving Chicken Caesar Wraps
Like any wrap, these chicken Caesar wraps are delicious with a side of sweet potato fries, our loaded baked potato salad, curried roasted cauliflower, or creamy dill potato salad.
You can also pair these wraps with our summer chickpea salad with tomatoes and feta to really turn this into a hearty meal.
