Growing up I was never a big fan of tomato soup but somewhere along the way, I have learned to appreciate it. Perhaps more for its ease of cooking than anything else but the truth is, my kids love it!
At the moment, this is the only soup that my 4-year-old and 2-year-old will eat. If that isn’t motivation to love a meal, I don’t know what is.
There are many different ways to make tomato soup but I, of course, have opted for the simplest recipe I know. My kids love a little sweetness to the soup so the sugar is there for flavour as well as to cut the acidity of the tomatoes.
If you have a little extra time, make a vegetable stock yourself with carrots, celery, and onions, and then just blend the veggies in with the passata. The kids will never know and you will feel accomplished that you got a few more veggies in them.

Preparation
If you don’t believe me that this recipe is simple brace yourself. Combine all of the ingredients in a pot, stir and simmer for 20 minutes on medium-low heat. Stir occasionally to prevent burning.
Wash the parsley, roughly shop 1 tablespoon and set aside for garnish.
While the soup is cooking, toast the bread and butter once toasted. If you have an air fryer, butter the bread first then place it in the air fryer for 4 minutes at 350°F. If you prefer fresh bread, skip the toasting, but keep the butter!
Once the flavours have come together, taste and add more salt and pepper if required. If you prefer a sweeter tomato soup add another teaspoon of sugar.
Pour the soup into a bowl and garnish it with parsley. Serve with toast on the side.
Serving
The toast can be served in a few interesting ways. You can make garlic toast by mixing in freshly pressed garlic into the butter or take it up another notch and also add some finely chopped parsley to make parley garlic butter.
Not good enough? No problem. Shred some cheese before putting the bread in the air fryer. Fry until the cheese is browned on the sides, roughly 5 minutes at 450°F. If you don’t have an air fryer you can accomplish the same goal in the oven.
Another way to add a little more substance to the soup is by adding starch into the soup itself. You can cook some rice. I suggest ¼ cup of cooked rice per cup of soup, which equals ¼ of uncooked rice for this whole recipe. Or, you can add noodles like mini shells or alphabet noodles for the kiddos.
Substitutions
Toast: You can use any type of bread for the toast or you can replace the toast altogether. Crackers are a great side or are delicious crumbled into your soup. Saltines are the favourite at our house.
Cream: I suggest using heavy cream however you can use half and half if that’s all you have on hand.
Simple Tomato Soup Recipe
Equipment
- Medium pot
Ingredients
- 660 ml passata strained tomatoes
- 1 cup stock
- 2 tbsp sugar
- 1 cup heavy cream
- Salt and ground black pepper to taste
- 1 tbsp fresh parsley garnish, optional
Toast (optional):
- 4 pieces of bread
- 2 tbsp butter
Instructions
- Combine all ingredients in a pot. Bring to a boil and simmer for 15 minutes.660 ml passata, 1 cup stock, 2 tbsp sugar, 1 cup heavy cream, Salt and ground black pepper to taste
- While the soup is simmering, toast bread in a toaster and butter. Alternatively, butter bread slices and place in an air fryer for 4 minutes at 350°F.4 pieces of bread, 2 tbsp butter
- Once the soup has simmered for 15 minutes, taste and add more salt and pepper as required. Please be careful as the soup will be very hot.Salt and ground black pepper to taste
- Pour the soup into a soup bowl and top with fresh chopped parsley.1 tbsp fresh parsley
