Lemon Dressing and Marinade

It may seem easier to buy dressing but a simple lemon dressing is all you need to liven up any salad. It’s quick and simple and chances are that you usually have all these ingredients on hand.

You can add more or less lemon if you prefer more or less tartness. You can also adjust the quantity of garlic to your taste. In fact, you can skip it altogether if garlic isn’t your thing. Yes! It will still taste delicious. 

It’s so light it really complements the delicate leaves of spinach, arugula or mixed greens. A simple spinach salad can be whipped up in no time. 

Preparation

Squeeze the juice of half a lemon. Peel and mince the garlic. Combine all ingredients in a small bowl and mix well until fully combined.

Substitutions

You can use store-bought lemon juice instead of freshly squeezed juice. In a pinch, you can also use lime juice however use only half of the recommended amount in this case. 

Serving

Serve over your favourite salad or pour over the chicken breast for a delicious marinade.

Ingredients
 
 

  • 2 Tbsp lemon juice about ½ a lemon
  • 4 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 garlic clove minced

Instructions
 

  • Combine all ingredients. Let sit for at least 30 minutes before serving to allow the flavours to marry.
