Simple Tomato Soup Recipe

Light, fresh, slightly sweet and of course simple. With just a handful of ingredients tomato soup whips up in just 30 minutes for those last-minute lunches.

Equipment

Ingredients
 
 

  • 660 ml passata strained tomatoes
  • 1 cup stock
  • 2 tbsp sugar
  • 1 cup heavy cream
  • Salt and ground black pepper to taste
  • 1 tbsp fresh parsley garnish, optional

Toast (optional):

  • 4 pieces of bread
  • 2 tbsp butter

Instructions
 

  • Combine all ingredients in a pot. Bring to a boil and simmer for 15 minutes.
    660 ml passata, 1 cup stock, 2 tbsp sugar, 1 cup heavy cream, Salt and ground black pepper to taste
  • While the soup is simmering, toast bread in a toaster and butter. Alternatively, butter bread slices and place in an air fryer for 4 minutes at 350°F.
    4 pieces of bread, 2 tbsp butter
  • Once the soup has simmered for 15 minutes, taste and add more salt and pepper as required. Please be careful as the soup will be very hot.
    Salt and ground black pepper to taste
  • Pour the soup into a soup bowl and top with fresh chopped parsley.
    1 tbsp fresh parsley
