Preparing Chicken Club Wrap or Sandwich

Ingredients

Chicken breasts: Chicken breasts are considered the white meat of a chicken. They are thick and tender when cooked just right. When overcooked, however, they become dry and tough to eat.

Ingredients of all-purpose spice ready to mix.G&K All-Purpose Spice: A combination of spices and herbs, this all-purpose seasoning is made for meals like this. Make a batch in advance and always have it handy to add to your protein.

Tomato: Tomatoes are a fruit, despite most people believing them to be vegetables. For this recipe, we use hothouse tomatoes because of their size. They are the perfect size for slicing and have a slightly sweet flavour when fully ripe. They contain vitamins C, E and A and are a great addition to any sandwich. Burger or wrap.  

Bacon: Bacon is salt cure pork from different cuts of the back. It is typically sold in slices. There are also non-pork alternatives such as turkey bacon that can also be used.

person picking butter lettuceButter lettuce leaves: Butterhead-type lettuces are known for their buttery taste, delicate texture, and loosely packed heads. We use the Boston variety for this recipe.

Mayonnaise: Mayo is made from eggs, oil and usually vinegar or lemon. When mixing these at high speeds you will get a white creamy texture like you find in a jar on the grocery store shelves.

How to Make a Chicken Club Sandwich or Wrap

Start by preheating the oven to 400°F.

Step 1: Bake the perfect chicken breasts

While the oven is warming, season the chicken breast generously on both sides with salt and G&K All-Purpose Spice.

Then, place the chicken breasts on a lined cookie sheet and place them in the oven for 35 minutes.

You can set a timer for 15 minutes to prep for adding the bacon to the oven.

 

 

TIP: You can also grill the chicken on the barbecue. Heat up the barbecue and cook for about 10-15 minutes per side on high heat with the lid open.

 
Step 2: Cook the bacon

While the chicken is cooking, line another cookie sheet with aluminum foil. Place the bacon slices on the cookie sheets side by side but without overlapping.

When there are 20 minutes left for the chicken, put the cookie sheet with the bacon in the oven. Set a timer for 10 minutes.

When the 10 minutes are up flip the bacon and place back in the oven for another 5 minutes.

This should add up to 35 minutes since the chicken went in the oven.

Step 3: Rest the meat

When the timers are up, remove the chicken and bacon from the oven. The chicken is done when the internal temperature reaches 165°F. Let the chicken rest for a few minutes on a cutting board.  Line a plate with a paper towel and place the bacon slices on it to absorb some of the excess grease.

TIP: Let the grease in the sheet pan with aluminum foil set as it cools, then fold up the foil and discard it in the garbage.

Step 4: Prep the produce and assemble the sandwich

Now all you have to do is wash and slice a tomato and wash the lettuce.

Slice the chicken width-wise and assemble the sandwich in your preferred order.

Assembling a Chicken Club Sandwich

Substitutions

Perfectly Baked Chicken Breast: If you don’t have the time or energy to bake chicken, a ready-made rotisserie chicken from the grocery store is an amazing option for this dish.

G&K All-Purpose Spice: This is my favourite go-to spice because I always have it on hand since it’s so easy and delicious. If you don’t have any made or don’t have all the required spices you can simply season the chicken with salt and pepper and brush it with your favourite barbecue sauce.

Tomato: I like to use vine tomatoes because they’re great to slice and put on a sandwich or wrap but as always any tomato you have on hand will be great. Varieties like plum tomatoes or Roma tomatoes won’t be as sweet. Consider that if you’re planning on substituting the mayo for another option as it also adds a hint of sweetness.

Butter lettuce leaves: As with everything else in this recipe, the greens can be whatever you like. If you have some spinach left over, use that. If you prefer some crunch try using iceberg lettuce or romaine hearts instead. Any kind of green sprouts would also be amazing!

Mayonnaise: If you want to add an extra pop of flavour try our garlic bean spread or dip or our garlic aioli. Equally as delicious, and with a bit of a kick, our jalapeno mayo or chipotle mayo are also amazing options for this chicken club sandwich.

Ciabatta buns: There are many different options you can use instead of ciabatta buns for this meal. If you would like to turn it into a wrap, use 2 8-inch tortillas instead. Otherwise, you can use toast bread, rye bread, kaiser bun or any other favourites.

Serving Chicken Club Sandwich/Wrap

This dish is a whole meal. You have your carbs, protein and veggies all in one. What more could you want? However, if your troops are extra hungry try adding a side salad like our simple spinach salad or our simple butter lettuce salad.

If that’s not enough, then bring out the big guns by adding oven-baked sweet potato fries or perfect creamy dill potato salad.

  • Serve on its own or with a side salad.
