- Start by cutting the pork or chicken into cubes or strips. - 2.5 lbs pork loin or chicken 
- Now make the souvlaki marinade. Peel and mince the garlic and juice a lemon.  Add all of the ingredients to a small bowl and stir well to combine. Add the meat to a sealed container, pour over the marinade, and ensure all the meat is coated. Marinate in the fridge while you prep everything else. - ½ cup olive oil, 4-5 garlic cloves, 1 tbsp dried oregano, 1 tsp salt, 1 tsp ground black pepper, 1 lemon 
- While the meat is marinating, prepare the tzatziki sauce. Peel the cucumber and grate it on a fine grater. Squeeze out as much of the juice as you can. Combine the cucumber and the remaining ingredients in a sealable container, mix well and move to the fridge once done. - ¼ cup sour cream, ¼ English cucumber, 1 small garlic clove, 1/8 tsp salt, 1/8 tsp ground black pepper 
- Now make the salad dressing. Peel and mince the garlic and combine all of the dressing ingredients in a small bowl or mason jar.  - 2 tbsp olive oil, 1 tbsp lemon juice, 1 small garlic clove, 1/8 tsp salt, Pinch of ground black pepper, ¼ tbsp dried oregano, ½ tsp Dijon mustard, 1 tsp red wine vinegar 
- We’re going to pan-fry the meat for this recipe. Add 2 tbsp oil to a pan and heat up on medium heat. Once the oil is hot, add the meat. Cook for 4-5 minutes depending on the thickness of the meat. The internal temperature should be at least 165°F. 
- Lastly prep the veggies. You can make a salad or add the veggies individually. Wash and cut the lettuce and tomatoes. Slice the onion and crumble the feta, and drain the olives. - 1/2 romaine heart, 8 grape tomatoes, 1 tbsp red onion, 1 tbsp kalamata olives, 1 tbsp feta cheese 
- Once the meat is cooked, assemble your wraps. You can either place all the ingredients onto a pita and wrap it like a taco. Or you can cut the pitas in half and open them up creating a pocket, then stuff it with the ingredients. - 4 pitas
