Start by cutting the pork or chicken into cubes or strips.

Now make the souvlaki marinade. Peel and mince the garlic and juice a lemon. Add all of the ingredients to a small bowl and stir well to combine. Add the meat to a sealed container, pour over the marinade, and ensure all the meat is coated. Marinate in the fridge while you prep everything else.

While the meat is marinating, prepare the tzatziki sauce. Peel the cucumber and grate it on a fine grater. Squeeze out as much of the juice as you can. Combine the cucumber and the remaining ingredients in a sealable container, mix well and move to the fridge once done.

Now make the salad dressing. Peel and mince the garlic and combine all of the dressing ingredients in a small bowl or mason jar.

We’re going to pan-fry the meat for this recipe. Add 2 tbsp oil to a pan and heat up on medium heat. Once the oil is hot, add the meat. Cook for 4-5 minutes depending on the thickness of the meat. The internal temperature should be at least 165°F.
Lastly prep the veggies. You can make a salad or add the veggies individually. Wash and cut the lettuce and tomatoes. Slice the onion and crumble the feta, and drain the olives.

Once the meat is cooked, assemble your wraps. You can either place all the ingredients onto a pita and wrap it like a taco. Or you can cut the pitas in half and open them up creating a pocket, then stuff it with the ingredients.
