White Bean Dip with Roasted Garlic

Using only 5-ingredients makes this a very simple dish which means anyone can make it, even the most novice chef.

Preparing White Bean Dip with Roasted Garlic

Ingredients

White kidney beans: Kidney beans are a type of legume. They are named kidney beans because their shape looks like a human kidney. There are different kinds of kidney beans, here we use red kidney beans. Kidney beans are a good source of protein and fiber. For this recipe we use white kidney beans.

Though the green shoots it sprouts, called garlic scapes, are also edible, we are referring to the actual bulb that the scapes grow from.  Garlic bulbs are made up of multiple cloves and depending on the variety you may have anywhere from 4 to 10 cloves, if not more. This is important to know because recipes will often call for a specific number of cloves which can vary in size greatly.

Dried Thyme: This herb has an amazing flavour that goes so well with most meats and veggies. It is part of the mint family and is a small bush, with branches that are covered in small leaves. We use a whole sprig or branch per packet so no need to pick off the leaves.

Dried Marjoram: Marjoram is a perennial herb from the mint family. It has a strong flavour, especially in its dried form, that has similar undertones as oregano and thyme. Marjoram is native to the Mediterranean but has spread across many continents. It is typically grown for cooking purposes.

Olive oil: I use olive oil for this recipe because of its mild flavour. Olive oil is the fat extracted from olives. The least processed is extra virgin olive oil, which I use in this recipe.

How to Make White Bean Dip with Roasted Garlic

 If you always have a couple of heads of garlic on hand like I do, you can whip up this delicious dip with very little notice.

So, if you don’t have roasted garlic handy, then start with step 1. Otherwise, move on to step 2.

Step 1: Roast the Garlic

Start by preheating the oven to 350˚F.

To prep the garlic, cut off the top of the head of garlic exposing the tips of the garlic cloves. Then, remove and discard any loose peels.

Place the head of garlic on a square of aluminum foil, cut side up. Then drizzle with a little olive oil and sprinkle with salt.

Now, wrap the head of garlic in the aluminum foil and place in the preheated oven for 30 minutes.

TIP: You can

buy roasted garlic but it’s so simple to make that there is no need.

Step 2: Prep the rest of the ingredients

While the garlic is roasting, strain the beans over the sink, rinse with cold water, and prep the remaining ingredients.

Add the beans, remaining olive oil and salt, as well as the thyme and marjoram to a blender.

Step 3: Make the white bean dip or spread with roasted garlic

Once the garlic is roasted, squeeze the cloves into the blender and blend all the ingredients until smooth.

I like this dip quite thick but you can easily thin it out by adding some water. Add one tablespoon of water to the blender and blend.

Continue adding water, one tablespoon at a time, until you reach your desired consistency.  

Serving White Bean Dip with Roasted Garlic

There are many ways to serve this white bean dip. Naturally, as a dip with tortilla chips or homemade pita chips is the most obvious way. Drizzle the dip with a little extra olive oil and sprinkle with coarsely ground salt and red pepper flakes for extra appeal and flavour.

But, this white bean dip with roasted garlic is not just a dip, it also makes an excellent spread. Spread the white bean dip on a sandwich or wrap or spread it on a crostini with balsamic drizzle.

  • 540 ml can white kidney beans (1 can)
  • 100 g Roasted garlic (1 head)
  • ½ tsp dried Thyme
  • 1 tsp dried Marjoram
  • ¾ tsp Salt
  • tsp Pepper
  • ¼ cup olive oil

Instructions
 

  • Preheat the oven to 350˚F
  • Cut off the top of the head of garlic exposing the tips of the garlic cloves. Then, remove any loose peels.

  • Add the beans, remaining olive oil and salt, as well as the thyme and marjoram to a blender. Once the garlic is roasted squeeze out the cloves in the blender and blend until smooth.

  • Serve with tortilla or pita chip or use a spread on wraps or sandwiches.
