Preparing Chipotle Mayo Recipe
Ingredients
Mayonnaise: Mayo is made from eggs, oil and usually vinegar or lemon. When mixing these at high speeds you will get a white creamy texture like you find in a jar on the grocery store shelves.
Lemon juice: Lemons are a citrus fruit loaded with vitamin C. These somewhat oval, yellow fruit are packed with flavour. They are sour and sometimes tart and add freshness to recipes. For this recipe we are using the juice of a lemon.
Chipotle puree: Chipotles are smoke-dried ripe jalapenos. The chipotle puree is, as it sounds, pureed chipotle chilis. It is smoky and spicy don’t need much to add a whole lot of flavour to any dish.
Can you use chipotle en adobo instead of chipotle puree or paste?
Chipotle en adobo is made by adding tomatoes, garlic and other spices with chipotles and is blended together to make a sauce. Chipotle puree or paste is just blended (or pureed) chipotle.
How to Make Chipotle Mayo
This chipotle mayo recipe is so simple.
Wash a lemon and cut it in half. Juice half of the lemon using a juicer or squeeze it with your hand. You only need 2 teaspoons so it won’t be hard to squeeze it yourself.
Add the lemon to a small bowl along with all of the other ingredients. Stir together to combine and taste test. If you find that it’s not spicy enough, add another teaspoon of the chipotle puree.
Substitutions
Mayonnaise: If you don’t have mayonnaise, you can use Greek yogurt but you will need to add a sweetener. I recommend making the dip as directed except with yogurt then add some sugar a quarter teaspoon at a time until you have reached your desired flavour.
Garlic powder: You can use fresh garlic or garlic paste instead of garlic powder. If you are using fresh add about half a teaspoon then taste test before adding more.
