This sweet breakfast pasta is going to surprise your taste buds. It’s just the right amount of sweetness and the perfect amount of cinnamon.
I’m sure pasta is not what comes to mind when you think about breakfast but you have to trust me on this one. I remember this dish from my childhood that’s how impactful it is.
The best part is that you can eat it warm or cold, making it an excellent meal prep dish. Just grab it from the fridge and go. No extra steps are required.
Preparing Sweet Breakfast Pasta
IngredientsÂ
Rotini: Usually about 2 inches in length this delicious pasta is bouncy and thanks to its screw-like thread it catches all the flavours of the other ingredients. This pasta is often confused with fussili which is actually a collection of strands shaped into a spring-like shape.
Cottage cheese: Â Cottage cheese is made up of curdled milk which creates curds. It comes in many different varieties, from dry to creamy with varying curd sizes. It has a mild slightly savoury flavour which makes it perfect for both savoury and sweet dishes. Cottage cheese is rich in calcium and protein making it a healthy part of your breakfast.Â
Sugar: White or granulated sugar is refined sugar made from either cane sugar or beet sugar. It is completely freed of molasses through the refining process and ground into granules smaller than salt.
Cinnamon: Cinnamon is a spice that is actually made out of the inner bark of the tree. You can commonly buy cinnamon sticks or ground cinnamon. This recipe calls for ground cinnamon. Â
Vanilla Extract: Â Pure vanilla extract is made by soaking vanilla beans in water and ethyl alcohol. You can get pure vanilla extract or vanilla extract flavour. The latter may be made from synthetic vanillin to mimic the flavour. There is no preference in this recipe but know that imitation vanilla use usually more budget-friendly than pure vanilla.
How to Make Sweet Breakfast Pasta with Cottage Cheese
This recipe is super simple. You’ll put the sauce together while the noodles are cooking so it will be ready in no time.
See the substitutions section for other options like pressed cottage cheese and different types of noodles.Â
Start by adding water to a pot and bringing it to a boil. Â
TIP: If you want to add even more protein and increase the fiber (up to 6 grams per serving of each) use chickpea pasta instead of wheat-based pasta.Â
Measure out your pasta and set it aside. Add the noodles and cook per the package instructions when the water comes to a boil.
To make the sauce, combine the cottage cheese, sugar, cinnamon and vanilla in a small bowl and stir well.
Taste test in case you prefer it to be sweeter. This is the minimum amount of sugar to cut the savoury flavour of cottage cheese. I don’t have
much of a sweet tooth so that’s just enough for me but may not be enough for you. Always make it to your taste!ÂTIP: If you have varying preferences in your household make the sauce as indicated in the recipe then let everyone add more sugar to their own plate or bowl.
Once the noodles are cooked strain them in a colander or strainer and serve topped with our sweet cottage cheese sauce.
Substitutions
Cottage Cheese: You can use any variety of cottage cheese. If you opt for dry-curd pressed cottage cheese, use 1/3 cup of the cheese and 2/3 cup of either plain yogurt or sour cream. You may need to increase the amount of sugar to offset the more sour taste of either of these options.

Rotini: You can use any noodles that you like however the best one will be able to hold onto the sauce. The spiral shape of the rotini noodles holds onto the curds and the sauce. Similarly, penne, conchigliette (shells)Â or even farfalle (bowtie) pasta, or any similar varieties will work great.
Serving Sweet Breakfast Pasta with Cottage Cheese
Serve the pasta in a bowl with the sauce on top or mix the noodles with the sauce in a pot then serve in a bowl or on a plate.Â
Sprinkle some extra cinnamon on top and you’re ready to eat!
