It may seem like there are a lot of ingredients but it really is very simple to make.
This loaf is a great fall recipe to add to your Thanksgiving table as a side. The colours of this recipe will accent your fall décor and the flavours will complement your favourite dishes.
Preparing Savoury Pumpkin Loaf

Eggs: Eggs are laid by many different animals but chicken eggs are what we use in this recipe. Eggs provide protein, fat and many other nutrients and therefore are a healthy part of our diet. Here they are used as a binder.
Kefir: Kefir is fermented milk most commonly from cows though it is also made from goat and sheep milk as well.
Pantry
All-purpose flour: I use all-purpose flour. It is a wheat flour and the most commonly used flour for baking. It is very versatile and makes anything from pizza dough to cookies and cakes. You can use whole wheat flour for this recipe to add a little bit more fibre if you’d like.
Baking soda: Also known as sodium bicarbonate, baking soda is a leavening agent that is alkaline, and is activated by acid in recipes. It gives baked goods a fluffy and light texture.
Baking powder: A leavening agent that is used in baking to create a light texture. It creates carbon dioxide when mixed with liquids and heat which expands and lifts the dough.
Ground flax seeds: High in fibre and omega-3 fatty acids, flax seeds are a great way to boost the nutritional value of any dish. Most experts recommend the use of ground flax seeds for better digestion and therefore better absorption of nutrients.
Neutral oil: They are called neutral because they have no flavour. These oils include sunflower oil and vegetable oil among others.
Sugar: White or granulated sugar is refined sugar made from either cane sugar or beet sugar. It is completely freed of molasses through the refining process and ground to granules smaller than salt.
Chia seeds: Chia seeds are very high in fiber and omega-3 fatty acids and protein. They are the edible seeds of a plant and are a complete plant-based protein.
Pumpkin puree: Pumpkin puree is made from cooked pumpkin that has been cooked and blended into a puree. Look for cans that say 100% pumpkin to get nothing but pumpkin flavour.
Sunflower seeds: Sunflower seeds are the seeds of a sunflower that have been picked off and shelled. We use raw sunflower seeds for this recipe because they get toasted during the baking process.
Pumpkin seeds: Pumpkin seeds are just what they sound like. They are the seeds removed from a pumpkin and then shelled. For this recipe, we use raw pumpkin seeds because they get toasted during baking.
How to Make Savoury Pumpkin Loaf
Start by preheating
your oven to 350°F then gather all of your ingredients. Line or grease a loaf pan and pour in the batter spreading it into a relatively even layer.Step 1
Combine the dry ingredients, up to and including salt, in a medium bowl. Whisk until well combined.
Step 2
In a large bowl, or the bowl of a stand mixer, add the remaining ingredients, except the toppings. Using a whisk or the whisk attachment on your stand mixer, mix everything until well combined.
Step 3
Now begin to add the dry ingredients into the wet ingredients, in three parts. Gently mix the batter in between just to blend everything together. Do not overmix.
Step 4
Pour the batter into the lined or greased loaf pan and top with pumpkin seeds and/or sunflower seeds, if you choose to do so.
TIP: Press the seeds gently into the batter so that they bake into the loaf and don’t fall off as easily once baked. Next, spray or brush the top of the loaf with some oil or butter to help the seeds bake. This will give them the perfect toasted flavour.
You can also use salad topper if you would like to add a hint of sweetness with the dried cranberries.
Step 5
Place the pan into the preheated oven and bake for 55-60 minutes. When you insert a toothpick into the center of the loaf it should come out clean.
Serving Savoury Pumpkin Loaf
