Simple Oat Bran Pancakes with Cottage Cheese Topping

These thick yet delicate pancakes topped with cottage cheese are full of protein and delicate flavour.

You probably know by now that I love pancakes so here is another delicious variation. These pancakes contain oat bran for some added fiber and a cottage cheese topping for some extra protein.

They are thick and slightly dense with a very mild flavour, and as always very easy to make.

Preparing Oat Bran Pancakes

Ingredients 

Pantry

All-purpose flour: I use all-purpose flour. It is a wheat flour and the most commonly used flour for baking. It is very versatile and makes anything from pizza dough to cookies and cakes. You can use whole wheat flour for this recipe to add a little bit more fibre if you’d like.

Oat bran: Oat bran is made from the outer shell of the oat seed. It has a similar nutritional profile to oatmeal with only slightly higher amounts of protein and fiber. The texture is quite different from oatmeal. It is made up of small granules that create a very smooth texture when combined with a liquid.

Sugar: White or granulated sugar is refined sugar made from either cane sugar or beet sugar. It is completely freed of molasses through the refining process and ground to granules smaller than salt.

Baking powder: A leavening agent that is used in baking to create a light texture. It creates carbon dioxide when mixed with liquids and heat which expands and lifts the dough.

Coconut oil: Coconut oil is also one of my secret ingredients. Though the flavour is quite subtle it adds just enough to elevate the overall taste of the pancakes.

Dairy

Eggs: Eggs are laid by many different animals but chicken eggs are what we use in this recipe. Eggs provide protein, fat and many other nutrients and therefore are a healthy part of our diet. Here they are used as a binder.

Milk: I use full fat (3.25%) or partly skimmed (2%) milk for this recipe. Adding milk and reducing the cream makes the sauce feel lighter. It also cuts the fat quite a bit if that’s something you look for.

How to Make Oat Bran Pancakes with Cottage Cheese Topping

Another easy recipe coming your way. This time with the addition of a fiber powerhouse. Gather all your ingredients and lets get started.

Step 1: Make the Batter

Mix the wet ingredients in a medium bowl.

 

In a separate large bowl or the bowl of a stand mixer combine the dry ingredients.

Add the wet ingredients to the dry ingredients and mix just until combined, just until there are no lumps. You don’t want to over-mix.

The batter will be quite thick and droopy. That’s what we’re looking for to make nice thick pancakes.

TIP: If you prefer flatter pancakes add another 2-3 tablespoons of milk to the batter and mix in gently so you don’t over mix.

Step 2: Cook the Pancakes

Heat up a tsp of coconut oil, or a neutral oil of your choice, on medium heat.

Once it’s hot add 1/4 cup of batter per pancake to the pan. I can fit 3 pancakes in my pan so I had 4 batches.

You may need to turn down the temperature as you cook because the pan will progressively get hotter.

Once you see the top of the pancake bubbling, after approximately 3 minutes, flip the pancakes over and cook for another 2-3 minutes.

Set aside the cooked pancakes and repeat until all the batter is gone. You can keep the cooked pancakes in an oven-save dish in a 200°F oven, covered with aluminum foil.

Substitutions

You can skip the oat bran in these pancakes and make just a regular batch of plain pancakes.

Serving Oat Bran Pancakes with Cottage Cheese Topping

You can serve these pancakes in the traditional ways. Either with a sprinkling of powdered sugar or some maple syrup.

But we like to take these already high-protein pancakes in a different direction. Add 2 tablespoons of cottage cheese on top, then sprinkle with cinnamon and a drizzle of maple syrup.

Frequently Asked Questions

Can I freeze oat bran pancakes?

Definitely! After you cook the pancakes let them cool. Next, lay them in a single layer, or if you need multiple layers separate them with parchment paper on a lined cookie sheet.

Place them in the freezer for an hour or until fully frozen. Move the pancakes to a sealable container and keep them for up to three months. 

How do I defrost oat bran pancakes?

To defrost, put the pancakes in a single layer in a microwave-safe dish in the microwave for 30-45 seconds. Then put them in the toaster for 2-3 minutes, depending on how crispy you like them. Serve as suggested above.
