Preparing A Fish and Shrimp Stew

Ingredients You’ll Need

  • 10oz haddock filets
  • 1lb raw shrimp
  • 2 garlic cloves, minced
  • ½ tsp salt, divided
  • 1 tsp Old Bay seasoning
  • 1 cup dry white wine
  • ½ onion, diced
  • 3 tbsp tomato paste
  • 2 tbsp hot pimento paste
  • ½ tsp paprika
  • 1 tbsp parsley, chopped (for garnish)
  • 1 tbsp olive oil
  • 2 tsp lemon juice

Ingredient Notes

Haddock
A mild white fish that holds its shape while cooking. Cod, halibut, or tilapia also work well.

Shrimp
Regular or tiger shrimp are great — just peel and remove tails for easier eating.

Hot Pimento Paste
Adds depth, colour, and heat. Substitute with harissa, red pepper paste, or a mild chili paste if preferred.

White Wine
Choose a dry wine like Sauvignon Blanc or Pinot Grigio. It enhances the broth without overpowering the seafood.

Step-by-Step Instructions

Step 1: Prep Onions and Garlic

Peel and finely dice the onion. Mince the garlic and set aside.
Tip: Prepping everything before cooking makes the dish faster and stress-free.

Step 2: Start the Flavour Base

Heat olive oil in a deep pan over medium heat. Add onions and sauté until softened, about 3–4 minutes.
Tip: Don’t rush this step — softened onions build sweetness.

Step 3: Season the Fish

Cut haddock into 2-inch pieces. Season with 1 tsp lemon juice, ⅛ tsp salt, and ¼ tsp paprika.
Tip: Pat fish dry before seasoning for better browning and texture.

Step 4: Add Garlic and Tomato Paste

Stir in garlic and cook for 30 seconds until fragrant. Add tomato paste and cook 1–2 minutes to deepen the flavour.

Step 5: Build the Stew Base

Add pimento paste, Old Bay seasoning, and white wine. Stir well and simmer uncovered for 5–10 minutes.
Tip: Allowing the wine to reduce intensifies flavour and thickens the broth.

Step 6: Prep Shrimp

Peel and clean shrimp. Season with remaining lemon juice, paprika, and â…› tsp salt.

Step 7: Add Fish to the Sauce

Gently nestle fish pieces into the pan. Spoon sauce over top if not submerged. Cover and cook 5 minutes.
Tip: Keep fish pieces in larger chunks to prevent breaking apart.

Step 8: Add Shrimp and Finish Cooking

Add shrimp and cook uncovered for the final 5 minutes, or until pink and fully cooked.

Step 9: Garnich and Serve

Sprinkle with fresh parsley. Serve hot with your favourite sides.

What to Serve with Fish & Shrimp Stew

  • Crusty bread for dipping
  • Rice or couscous

  • Lemon and parsley salad

How to Store and Reheat

  • Refrigerate: Store cooled stew in an airtight container for up to 2 days.
Freeze: Freeze without shrimp for the best texture; up to 1 month.
  • Reheat gently: Low heat on the stovetop — avoid boiling to prevent the fish from breaking apart.
