Peel and dice the onion and peel and mince the garlic.

Heat up the oil on medium heat and add the onions once hot. Sauté until they begin to soften.

In the meantime, cut the haddock into 2-inch wide steaks and season with a squeeze of lemon juice, approximately one teaspoon, 1/8 tsp salt and ¼ tsp paprika.

Once the onions are soft, press in the garlic and cook for another 30 seconds. Then add the tomato paste and stir, cooking for a minute or two. Then add the pimento, Old Bay seasoning and wine. Cook for about 5-10 minutes.

Peel the shrimp, clean them and remove the tail. Season with the remaining lemon and paprika and 1/8 tsp salt.

Add the haddock to the sauce, pouring the sauce over the fish if it’s not fully submerged. Cover with a lid and cook for 5 minutes.
10 oz haddock filets
After 5 minutes, add the shrimp and cook for a final 5 minutes.

Wash and chop the parsley and top stew as garnish.
