Mediterranean Fish and Shrimp Stew

This easy Mediterranean Fish and Shrimp Stew is packed with flavour! One-pan seafood dinner with tomato, white wine, and paprika. Ready in under 40 minutes.

Ingredients
 
 

  • 10 oz haddock filets approx. 2 fillets
  • 1 lbs raw shrimp shelled, tails removed
  • 2 garlic cloves
  • ½ tsp salt divided
  • 1 tsp Old Bay seasoning
  • 1 cup dry white wine
  • ¼ cup onion approx. half an onion
  • 3 tbsp tomato paste
  • 2 tbsp hot pimento paste
  • ½ tsp paprika divided
  • 1 tbsp parsley for garnish
  • 1 tbsp olive oil
  • 2 tsp lemon juice

Instructions
 

  • Peel and dice the onion and peel and mince the garlic.
    ¼ cup onion, 2 garlic cloves
  • Heat up the oil on medium heat and add the onions once hot. Sauté until they begin to soften.

  • In the meantime, cut the haddock into 2-inch wide steaks and season with a squeeze of lemon juice, approximately one teaspoon, 1/8 tsp salt and ¼ tsp paprika.

  • Once the onions are soft, press in the garlic and cook for another 30 seconds. Then add the tomato paste and stir, cooking for a minute or two. Then add the pimento, Old Bay seasoning and wine. Cook for about 5-10 minutes.

  • Peel the shrimp, clean them and remove the tail. Season with the remaining lemon and paprika and 1/8 tsp salt.

  • Add the haddock to the sauce, pouring the sauce over the fish if it’s not fully submerged. Cover with a lid and cook for 5 minutes.

  • After 5 minutes, add the shrimp and cook for a final 5 minutes.

  • Wash and chop the parsley and top stew as garnish.
