Chicken burgers often come either breaded or with a grilled chicken breast but neither of these methods really captures the juiciness or flavour of a hamburger. I love a good hamburger any day of the week and these chicken burgers are right at the top of my list of favourites.Â
I used to make my own burgers all the time then somewhere along the way the convenience of store-bought burgers won me over. Now, there is nothing wrong with store-bought. You can get a really good quality burger for a very decent price. But there is something to be said for being able to make the burger just the way you like it.
Once you’ve tried this recipe, like me, you will see that homemade burgers are easier than they seem and totally worth the effort.
Preparing Chicken Burgers:
Mix all ingredients in a stand mixer or in a medium bowl using your hands. Don’t over mix, you don’t want your chicken burgers to be too dense. The mixture should be a bit wet and sticky.
Heat up a tablespoon of oil in a pan on medium-high heat.
Once you have combined all the chicken burger ingredients, divide the meat into four and shape each fourth into a patty using your hands. I prefer to make mine a bit flatter because the patty will lose diameter as it cooks.
Gently place each patty in the hot pan, without overcrowding, and let brown a little bit for a minute or two. Then turn down the heat to medium and fry the chicken burgers for 8 minutes. Flip the patties and cook for another 8-10 minutes or until the center is fully cooked and measures 165ºF on a meat thermometer.
Serving Greek-Style Chicken Burgers
Like most burgers, I prefer mine on a bun however these chicken burgers would do great on a leaf of iceberg lettuce as well. They are juicy and full of flavour and won’t need much in the way of toppings.
When serving on a bun, I like to add the toppings listed in the ingredients section.
Serve with a side of fries, roasted potatoes, and/or a salad to complete the meal.
Substitutions
You can easily substitute ground turkey for ground chicken. I find that turkey is more dry than chicken so you may want to add a tablespoon of milk if you find that the final mixture isn’t sticky.
You can use dried parsley instead of fresh as well as fresh oregano instead of dried. If you use fresh oregano, finely chop the leaves and add half the suggested amount. Any number of the ingredients can be left out and you’ll still end up with a delicious burger.
Storing Chicken Burgers
Cooked, these chicken burgers will keep in the fridge, in a sealed container for up to 3 days. However, my preference is to freeze them uncooked. This way you have freshly cooked burgers every time without all the extra work.
Once you have mixed
the ingredients for the patties, simply lay the patties on a parchment or silicone mat-lined cookie sheet and place them in the freezer for an hour. Once frozen, transfer the patties into a freezer-safe plastic or silicone bag. They will keep in the freezer for up to 3 months.If like me, you freeze your ground meat when you get home from the grocery store then it is not advised to refreeze the meat again. Make the burgers right when you purchase the meat and then freeze the patties. If you are using previously frozen ground chicken then cook the burgers before freezing again.
Greek-Style Chicken Burger Recipe
Equipment
- Medium bowl

Ingredients
- 450 g ground chicken
- 1 egg
- 1 tbsp fresh parsley
- 1 tsp dried oregano
- ¼ tsp ground black pepper
- ¼ tsp salt less if your feta is very salty
- ¼ cup feta cheese
- 1 tbsp kalamata olives
- ½ small onion
- ½ tsp lemon juice
- 1 tbsp olive oil
- 4 Hamburger buns or lettuce leaves
Optional Toppings:
- Spinach
- Tzatziki
- tomato
- Avocado
Instructions
- Chop the parsley, kalamata olives and onion. Crumble feta cheese and juice lemon.1 tbsp fresh parsley, 1/4 cup feta cheese, 1 tbsp kalamata olives, 1/2 small onion, ½ tsp lemon juice
- In a medium bowl, or the bowl of a stand mixer, add all ingredients up to, and including, lemon juice.450 g ground chicken, 1 egg, 1 tbsp fresh parsley, 1 tsp dried oregano, 1/4 tsp ground black pepper, 1/4 cup feta cheese, 1 tbsp kalamata olives, 1/2 small onion, ½ tsp lemon juice, 1/4 tsp salt
- Mix ingredients just until combined. You don’t want to overmix; it will make your burgers dense. The mixture should be a bit sticky.
- Divide your meat mixture into 4 equal parts. Form each part into a patty. I make mine about ½ inch thick, they will shrink a little in diameter.
- Heat a tablespoon of oil in a large pan on high heat. Once the oil is hot, place each patty in the pan. Do not overcrowd the pan. Let them cook for about a minute to brown then turn the heat down to medium. Cook for 8 minutes then flip and cook on the other side for 8-10 minutes. It may take longer depending on the thickness of your patties. The temperature in the center should reach 165ºF.1 tbsp olive oil
