Chop the parsley, kalamata olives and onion. Crumble feta cheese and juice lemon.
1 tbsp fresh parsley, 1/4 cup feta cheese, 1 tbsp kalamata olives, 1/2 small onion, ½ tsp lemon juice
In a medium bowl, or the bowl of a stand mixer, add all ingredients up to, and including, lemon juice.
450 g ground chicken, 1 egg, 1 tbsp fresh parsley, 1 tsp dried oregano, 1/4 tsp ground black pepper, 1/4 cup feta cheese, 1 tbsp kalamata olives, 1/2 small onion, ½ tsp lemon juice, 1/4 tsp salt
Mix ingredients just until combined. You don’t want to overmix; it will make your burgers dense. The mixture should be a bit sticky.
Divide your meat mixture into 4 equal parts. Form each part into a patty. I make mine about ½ inch thick, they will shrink a little in diameter.
Heat a tablespoon of oil in a large pan on high heat. Once the oil is hot, place each patty in the pan. Do not overcrowd the pan. Let them cook for about a minute to brown then turn the heat down to medium. Cook for 8 minutes then flip and cook on the other side for 8-10 minutes. It may take longer depending on the thickness of your patties. The temperature in the center should reach 165ºF.

Serve on hamburger buns or lettuce with your favourite toppings.
