Garlic Butter Spaghetti

When your toddler discovered butter noodles you can spruce them up by making this garlic parmesan version of butter spaghetti. It’s simple quick and adds a bit of nutrients to an otherwise simple meal.

My kids used to like a bit of sauce on their noodles, but then they discovered butter spaghetti. Well, they haven’t eaten a sauce since.

The good news is that when I started making butter noodles my way they didn’t notice that I slipped in a couple of extra ingredients. Now my daughter doesn’t actually like plain noodles with butter, that’s how good this recipe is!

If you have the options, add some chopped fresh parsley on top to add another layer to this delicious but simple meal.

This is not a dish I serve the grown-ups but I don’t complain when I have to finish off the kids’ leftovers.

Preparing Garlic Butter Spaghetti

Ingredients 

Spaghetti: Spaghetti is a staple food of Italian cuisine. It’s a long, thin, cylindrical noodle often made from durum wheat semolina or wheat flour and water.

Butter: Butter is churned milk or cream and is high in fat. It is solidified when refrigerated, holds a semi-soft, spreadable consistency at room temperature, or can be liquefied when heated.

Grated parmesan: Grated parmesan cheese is perfect for this recipe, and I don’t mean freshly grated. The relatively inexpensive pre-grated type is just right here. The flavour is perfect and I always find it a bit of a waste to use the freshly grated stuff in a sauce where it just melts away. Save the expensive fresh stuff for topping your pasta.

Garlic: Garlic is a bulb that is edible and is grown in soil. Though the green shoots it sprouts, called garlic scapes, are also edible, we are referring to the actual bulb that the scapes grow from.  Garlic bulbs are made up of multiple cloves and depending on the variety you may have anywhere from 4 to 10 cloves, if not more. This is important to know because recipes will often call for a specific number of cloves which can vary in size greatly.

How to Make Butter Spaghetti

This recipe is really quite simple. Cook the noodles and coat in butter garlic and parmesan cheese. Yes, it’s that simple! But here are the detailed steps in case this still sounds too good to be true.

Start by cooking the spaghetti according to package instructions. Usually, it takes anywhere from 9-11 minutes for al dente noodles.

While the spaghetti cooks, peel the garlic and get your butter and cheese ready.

 

Reserve a few tables spoons of pasta water. Strain the noodles and set aside.

Add the butter to the same pot the noodles were in and place it back on the hot burner.  Once the butter starts turning golden brown press in the garlic. Cook for 30 seconds and turn off the heat.

Add the noodles back and toss to coat.

Add the parmesan cheese and stir to distribute the cheese well. It should also begin to melt

a bit as you toss it with the hot spaghetti. You can add the reserved pasta water, one tablespoon at a time if you want a more melted consistency.

Serve with your kids’ favourite sides.

Serving Yogurt Marinaded Curry Chicken Skewers

Serve these skewers as an appetizer, for lunch in a wrap or as a main dish with rice. Either way, you want to serve these curry chicken skewers topped with fresh cilantro with raita as a dip or spread. The dip adds the perfect balance to the curry flavour.

  • 1 tablespoon butter note 1
  • 2 tbsp grated parmesan
  • 1 garlic clove

Instructions

Notes

Note 1: I like to use unsalted butter for two reasons. The first is that I try to minimize the amount of salt I feed my kids. And the second reason is that the parmesan will add salt to the dish which I believe to be enough.
