Ginger and soy bok choy is a delicious and bright side dish that is packed with flavour and vitamins and it’s quick and super easy to make!
Bok choy can seem intimidating but it’s actually easy to work with, especially in this delicious side dish of ginger and soy bok choy.
The beautiful green colour of this vegetable really adds a nice pop to any dish. Serve it on the side of chicken, or fish or in a rice bowl.
The simplicity of this dish means that you really can’t mess it up.
Also, you don’t have to worry about being too precise with the measurements. Measure the ginger and garlic with your heart and eyeball the rest.
Preparing Ginger and Soy Bok Choy

Soy sauce: Made from fermented soybeans and wheat, this Chinese condiment is salty and very dark in colour. There are many different varieties of soy sauce but we use dark soy sauce for this recipe.
Neutral oil: They are called neutral because they have no flavour. These oils include sunflower oil and vegetable oil among others.
Brown sugar: Brown sugar is a mixture of white sugar and molasses. Molasses is responsible for the darker colour. We use dark brown sugar for this recipe but any brown sugar will do.

Bok Choy: Bok choy is a type of Chinese cabbage. It has white stems and light to dark leaves. It comes in a baby version as well which you can use for this recipe if you’d like.
Ginger: For this recipe, we use fresh ginger which is the root of the ginger plant. It is native to Asia and is packed with antioxidants. Ginger is often used for medicinal purposes in eastern medicine and is packed with flavour.
Garlic: Garlic is a bulb that is edible and is grown in soil. Though the green shoots it sprouts, called garlic scapes, are also edible, we are referring to the actual bulb that the scapes grow from. Garlic bulbs are made up of multiple cloves and depending on the variety you may have anywhere from 4 to 10 cloves, if not more. This is important to know because recipes will often call for a specific number of cloves which can vary in size greatly.
How to Make Ginger and Soy Bok Choy
This is a very simple and quick dish. It’s perfect as a last-minute addition to any meal.
Step 1: Make the sauce
Start by making the sauce. Peel the garlic and ginger and grate into a small bowl or glass measuring cup.
Next, add half of the oil, brown sugar, and soy sauce to the small bowl. Whisk everything until it’s combined well and set aside.
Step 2: Brown the Bok Choy
To prepare the bok choy, cut it in half lengthwise. Then wash the bok choy under cold running water and shake off any excess water. Make sure to wash well near the bottoms as the dirt likes to hide there.
Now, add the remaining oil to a pan and heat it up on medium-high heat. Once hot and add the bok choy cut side down. Cook undisturbed for 3 minutes.
Then flip and cook for another 2 minutes.
Remove the bok choy from the pan and set aside.
Step 3: Finish of the Ginger and Soy Bok Choy
Pour the sauce into the pan and turn the heat down to medium. Next, add ¼ cup of water and stir well.
Place the bok choy back in pan, into the sauce, cut side down again. Cover the pan with a lid and steam for another 2 minutes.
Remove the bok choy from pan and pour over any remaining sauce from the pan.
Serve immediately.
Serving Ginger and Soy Bok Choy
This is a super simple side dish and it’s perfect for any meal. Add it to your power bowl or as a side to your favourite chicken or fish dish.
I also love eating this ginger and soy bok choy on its own as a snack topped with some red pepper flakes.

Ingredients
- 2 bok choy
- 2 tbsp Soy sauce
- 1 cube Ginger
- 1 clove Garlic
- 2 tbsp oil divided
- ½ tbsp brown sugar
- ¼ cup water
- Sprinkle of red pepper flakes for garnish optional
Instructions
- Combine the sauce ingredients except for HALF the oil, water and the bok choy, in a bowl.2 tbsp Soy sauce, 1 cube Ginger, 1 clove Garlic, 2 tbsp oil, ½ tbsp brown sugar
