Combine the sauce ingredients except for HALF the oil, water and the bok choy, in a bowl.
2 tbsp Soy sauce, 1 cube Ginger, 1 clove Garlic, 2 tbsp oil, ½ tbsp brown sugar
Cut bok choy in half lengthwise. Wash the bok choy and shake off extra water. Make sure to wash well near the bottoms as the dirt likes to hide there.

Add oil to a pan and heat up on medium-high heat. Once hot add the bok choy cut side down. Cook undisturbed for 3 minutes. Then flip and cook for another 2 minutes.

Remove the bok choy from the pan.
Pour in the sauce and turn the heat down to medium. Next add ¼ cup of water and stir.

Place the bok choy back in pan, in the sauce, cut side down again. Cover the pan with a lid and steam for another 2 minutes.
Remove from pan and pour over any remaining sauce. Serve immediately.
