These crispy herb and parmesan roasted baby potatoes are the perfect side to add flavour to your meal. With just a few ingredients they are quick and easy to make.

If you’ve ventured through our blog you know by now that I love potatoes of any kind. These crispy parmesan herbed roasted baby potatoes are just the perfect addition to our potato repertoire.

The crust created by the parmesan not only adds to the crispiness of the potatoes but also brings out the best in the cheese. The flavour and saltiness intensify making this a very flavourful dish.

Preparing Herbed Parmesan Roasted Baby Potatoes

Ingredients 

Italian seasoning: Italian seasoning is a mixture of multiple spices. Typically it includes oregano, thyme, basil, rosemary and marjoram.

Parmesan: Grated parmesan cheese is perfect for this recipe, and I don’t mean freshly grated. The relatively inexpensive pre-grated type is just right here. The flavour is perfect and I always find it a bit of a waste to use the freshly grated stuff in a sauce where it just melts away. Save the expensive fresh stuff for topping your pasta.

person holding red potatoesBaby potatoes: Baby potatoes are potatoes that are harvested before they are fully ripened. Baby potatoes are recommended in this recipe because you want the potatoes encased in their skin for the best results. The skin adds flavour and keeps the flesh from drying out.

Oil: I use olive oil for this recipe because of its mild flavour. Olive oil is the fat extracted from olives. The least processed is extra virgin olive oil, which I use in this recipe.

How to Make Crispy Herbed Parmesan Roasted Potatoes 

If you’re using mini potatoes this recipe will be extra quick. They are easy to wash and don’t require much chopping. So let’s get started.

Step 1

Preheat the oven to 400°F

Step 2

Next, wash the potatoes leaving the skin on. Once clean, cut the potatoes into halves.

Step 3

Add the potatoes to a glass oven-safe dish. Then add the oil, salt and Italian seasoning and toss to coat the potatoes evenly.

Step 4

Place the baby potatoes in the preheated oven for 20 minutes.

Step 5

When the timer goes off, take the potatoes out of the oven, sprinkle them with the parmesan cheese and toss using spatulas. Be careful not to burn yourself.

TIP: Place the potatoes cut side down to get that cheese extra crispy. 

Step 6

Place the dish back in the oven for another 15 to 20 minutes.

Substitutions

Potatoes: You can use any kind of potatoes for this recipe. Russet, yellow flesh and red potatoes would all be great.

Just adjust your cooking time depending on how you cut them. Potatoes wedges will likely take a similar amount of time whereas fries will cook faster.

Depending on their size, halved baby potatoes should be fully cooked in about 30-35 minutes in a 400°F oven. We cook them for a little longer to make them crispy.

  1. How do I get the cheese to be crispy?

Place the potatoes cut side down after tossing them with the parmesan cheese will ensure that the cheese gets crispy. The cooking time is also important which is why we give it 20 minutes to get the beautiful golden crust.

  1. Do I need to boil potatoes before roasting them?

Parboiling potatoes before roasting them does help to make them crispy but for this recipe, it’s not necessary. Follow the instructions above and you’ll have a delicious crispy crust all over your potatoes.
