Crispy Herb and Parmesan Roasted Baby Potatoes Recipe

These crispy herb and parmesan roasted baby potatoes are the perfect side to add flavour to your meal. With just a few ingredients they are quick and easy to make.

  • 1 lbs baby potatoes
  • ½ tsp salt
  • 2 tsp Italian seasoning
  • 2 tbsp parmesan
  • 3 tbsp oil

Instructions
 

  • Preheat the oven to 400°F
  • Wash the potatoes leaving the skin on and cut them potatoes into halves.
    1 lbs baby potatoes
  • Add the potatoes to a glass oven-safe dish. Then add the oil, salt and Italian seasoning and toss to coat the potatoes evenly.
    1 lbs baby potatoes, ½ tsp salt, 2 tsp Italian seasoning, 3 tbsp oil
  • Place the potatoes in the preheated oven and set a timer for 20 minutes.
  • When the timer goes off, take the potatoes out of the oven, sprinkle them with the parmesan cheese and toss using spatulas. Be careful not to burn yourself. I like to put the potatoes cut side down to get the cheese really crispy.
    2 tbsp parmesan
  • Place the dish back in the oven for another 20 minutes.
  • Serve with your favourite mains.
