Preheat the oven to 400°F
Wash the potatoes leaving the skin on and cut them potatoes into halves.
1 lbs baby potatoes
Add the potatoes to a glass oven-safe dish. Then add the oil, salt and Italian seasoning and toss to coat the potatoes evenly.
1 lbs baby potatoes, ½ tsp salt, 2 tsp Italian seasoning, 3 tbsp oil
Place the potatoes in the preheated oven and set a timer for 20 minutes.
When the timer goes off, take the potatoes out of the oven, sprinkle them with the parmesan cheese and toss using spatulas. Be careful not to burn yourself. I like to put the potatoes cut side down to get the cheese really crispy.
2 tbsp parmesan
Place the dish back in the oven for another 20 minutes.
Serve with your favourite mains.
