Preparing Carrot Cake Overnight Oats
Ingredients
Vanilla Greek yogurt: Greek yogurt is yogurt that has whey and other liquids strained from it. It’s thicker and creamier than other types of yogurt. Vanilla is just flavouring that is added to plain Greek yogurt.
Rolled oats: Also called old-fashioned or whole oats, these oats are steamed and pressed to gain their shapes. These are most commonly used to make granola and in baking.
Milk: Milk makes up the liquid of this sauce. I add partly skimmed or full-fat milk in this recipe but you can use any milk that you like, including plant-based milk. Just keep in mind that some plant-based milks are sweeter than cow’s milk so adjust the vanilla as necessary.
Carrot: This root vegetable is slightly sweet, bright and filled with vitamin A and fibre. Baby-cut carrots are just smaller pieces cut from a larger carrot. Carrots are rich in potassium, fiber and vitamin C and antioxidants.
Cinnamon: Cinnamon is a spice that is actually made out of the inner bark of the tree. You can commonly buy cinnamon sticks or ground cinnamon. This recipe calls for ground cinnamon.
Vanilla: Pure vanilla extract is made by soaking vanilla beans in water and ethyl alcohol. You can get pure vanilla extract or vanilla extract flavour. The latter may be made from synthetic vanillin to mimic the flavour. There is no preference in this recipe but know that imitation vanilla use usually more budget-friendly than pure vanilla.
Nutmeg: Nutmeg is a seed coming from an evergreen tree. The seed is used as a spice in food however be careful not to use too much for two reasons. One reason is that it’s a very overpowering flavour. The second is that in larger amounts it can be toxic due to its psychoactive effects.
Flax seeds: High in fibre and omega-3 fatty acids, flax seeds are a great way to boost the nutritional value of any dish. Most experts recommend the use of ground flax seeds for better digestion and therefore better absorption of nutrients.
How to Make Carrot Cake Overnight Oats
This super simple recipe only has one annoying task so let’s start with that.
Step 1: Prep the carrot
Peel a small carrot and using the small side of a box grater shred the carrot until you have roughly 2 tablespoons. This is a flexible measurement so no need to be precise.
Step 2: Make the Overnight Oats
Now that the carrots are ready there is only one thing left to do. Add all of the ingredients, including the carrots to the mason jar and stir. Or you can put the lid on the jar and give it a few good shakes to mix everything up evenly.
TIP: Make multiple batches so you have breakfast for the whole week.
Step 3: Refrigerate
Once you’re done making your oats place the jar(s) in the fridge overnight for the perfect on-the-go breakfast the next morning, just grab it from the fridge and don’t forget a spoon!
Storing Overnight Oats
These overnight oats should be in the fridge for at least one night before consuming. However, they can continue to sit in the fridge for up to 1 week making these the perfect meal prep dish for the week.

There is nothing to this meal when it comes to serving. The best way to eat it is right out of the jar, but if you’re feeling extra, pour the oats into a bowl and sprinkle with some additional cinnamon for a beautiful breakfast.

- 8oz mason jar
Ingredients
- ½ cup vanilla yogurt
- ⅓ cup rolled oats
- ¼ cup milk
- 2 tbsp shredded carrot
- ⅓ tsp cinnamon
