Heat up the oil on medium heat. In the meantime, peel and dice the onion and add it to the pan once the oil is hot.

While the onion softens, wash and dice the bell pepper, then add it to the pan. Stir occasionally to prevent burning.

Next, peel and press the garlic into the pan and drain and rinse the beans and add them to the pan.

Finally, add the salsa, taco spice and salt and stir everything until well combined then simmer for about 5 minutes.

After about 5 minutes, create four small wells in the sauce and crack an egg into each. Then cover the pan with a lid and cook for 6-8 minutes until the eggs reach your preferred doneness.

Once the eggs are cooked, remove the pan from the heat and take off the lid. Top the eggs with jalapenos and cilantro and sprinkle with some salt and pepper.
