  • 1 tbsp olive oil
  • ¼ cup onion
  • ½ cup bell pepper
  • 1 clove garlic
  • ½ cup kidney beans
  • 2 tbsp G&K Taco Spice
  • 1 cup salsa
  • 4 eggs
  • ¼ tsp salt

Instructions
 

  • Heat up the oil on medium heat. In the meantime, peel and dice the onion and add it to the pan once the oil is hot.

  • While the onion softens, wash and dice the bell pepper, then add it to the pan. Stir occasionally to prevent burning.

  • Next, peel and press the garlic into the pan and drain and rinse the beans and add them to the pan.

  • Finally, add the salsa, taco spice and salt and stir everything until well combined then simmer for about 5 minutes.

  • After about 5 minutes, create four small wells in the sauce and crack an egg into each. Then cover the pan with a lid and cook for 6-8 minutes until the eggs reach your preferred doneness.

  • Once the eggs are cooked, remove the pan from the heat and take off the lid. Top the eggs with jalapenos and cilantro and sprinkle with some salt and pepper.
