If you don’t want the slaw to be too sour, rinse the sauerkraut under cold water before adding it to a bowl. I like it very sour so I skip the rinsing. The sauerkraut pieces can also be quite long so feel free to give it a rough chop if you prefer shorter pieces.

Next, grate the carrot on a fine grater and peel and dice the onion. Add both to the sauerkraut.
¼ cup carrot, ¼ cup onion
Add oil, salt and pepper and toss well to distribute all ingredients evenly. If you want to tame the sourness further, you can add some sugar. Start with half a teaspoon and adjust to your taste.
¼ tsp salt, ¼ tsp pepper, 1 tbsp oil
Serve with your favourite mains.
