  • 14 oz sauerkraut
  • ¼ cup carrot (1 small carrot)
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup onion (¼ medium onion)
  • 1 tbsp oil

Instructions
 

  • If you don’t want the slaw to be too sour, rinse the sauerkraut under cold water before adding it to a bowl. I like it very sour so I skip the rinsing. The sauerkraut pieces can also be quite long so feel free to give it a rough chop if you prefer shorter pieces.

  • Next, grate the carrot on a fine grater and peel and dice the onion. Add both to the sauerkraut.
    ¼ cup carrot, ¼ cup onion
  • Add oil, salt and pepper and toss well to distribute all ingredients evenly. If you want to tame the sourness further, you can add some sugar. Start with half a teaspoon and adjust to your taste.
    ¼ tsp salt, ¼ tsp pepper, 1 tbsp oil
  • Serve with your favourite mains.
