Pork Souvlaki Recipe

The simple marinade makes the pork tender and light. Souvlaki makes a great dinner paired with rice or potatoes or a hearty lunch in a wrap with tzatziki sauce.

Ingredients
 
 

  • 2.5 lbs pork loin

Marinade:

  • ½ cup olive oil
  • 4-5 garlic clove
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 lemon juiced
  • Tzatziki Sauce optional

Instructions
 

  • Prepare the marinade by combining all the marinade ingredients in a small bowl or measuring cup.

  • Cut the pork loin into 1 ½ inch cubes.
    2.5 lbs pork loin
  • Place the pork cubes into a sealable bag or bowl. Pour the marinade over the pork and stir until the pork is well coated. Place in the refrigerator to marinade for at least 60 minutes. Stir the pork after 30 minutes to make sure all pork sits in the marinade.
  • Take the pork out of the refrigerator to bring to room temperature. If you are using wooden skewers place them in water for 15 minutes.
  • After one hour, turn on the grill and warm it to at least 500°F.
  • Place 5-6 cubes on each skewer (I got 6 skewers out of my pork loin).
  • When the grill is warmed up, add the skewers without crowding. Turn the heat down to medium and cook for 5 minutes on each side.
  • If you are using metal skewers they will be very hot. Using an oven mitt and tongs or a fork remove the meat from the skewers and plate.
  • Serve with saffron rice, Greek salad and tzatziki sauce.
