Lemon Parsley Dip and Spread Recipe

  • ½ cup cottage cheese
  • ½ cup parsley (note 1)
  • ½ tsp salt
  • tsp pepper
  • ½ tbsp lemon juice
  • Zest of half a lemon
  • ¼ cup sour cream or plain Greek yogurt
  • 1 clove garlic
  • ½ tsp sugar

Instructions
 

  • Wash the lemon, then zest and juice half of it.
    1/2 tbsp lemon juice, Zest of half a lemon
  • Add all of the ingredients to a blender or the cup of a handheld blender. Mix on high until smooth.
    1/2 cup cottage cheese, 1/2 cup parsley, 1/2 tsp salt, 1/8 tsp pepper, 1/2 tbsp lemon juice, Zest of half a lemon, 1/4 cup sour cream or plain Greek yogurt, 1 clove garlic, 1/2 tsp sugar
  • Serve as a dip, or use as a spread or drizzle.

Notes

Note 1: This is a great recipe to use up parsley stems so if you have a bunch of parsley and need the leaves for something else use just stems here.
Note 2: Nutritional values are based on full-fat cottage cheese and sour cream per table spoon.
