Ingredients
 
 

  • 8 boneless skinless chicken thighs (½ lb per person)
  • ½ cup plain yogurt
  • 25 ml lemon juice (approx. ½ lemon)
  • 1 tsp garam masala
  • ½ tsp chili powder
  • ½ tsp ground coriander
  • ¼ tsp paprika
  • ½ tsp salt
  • 1 garlic clove
  • 1 cube ginger
  • Red food colouring (optional)

Instructions
 

  • Combine all ingredients except the chicken in a glass bowl. Add the chicken thighs and mix until they are well coated. Cover and marinade in the fridge for at least 1 hour.
    1/2 cup plain yogurt, 25 ml lemon juice, 1 tsp garam masala, 1/2 tsp chili powder, 1/2 tsp ground coriander, 1/4 tsp paprika, 1/2 tsp salt, 1 garlic clove, 1 cube ginger, Red food colouring, 8 boneless skinless chicken thighs
  • After at least 1 hour, remove the chicken from the fridge and turn on the barbecue and grease the grill. Heat up the barbecue to about 500˚F. Once the barbecue is hot, place the chicken thighs on the grill spacing them out. Turn the flames down to medium, cover the lid and cook the thighs for about 8-10 minutes. Keep an eye on them to make sure they are not burning.
  • Flip the thighs over, cover and cook for another 10 minutes. Once you get a nice char on the chicken you can move the thighs to the top rack to prevent burning.
