Start by making the marinade by combining the soy sauce, honey and apple cider vinegar in a small bowl.
2 tbsp soy sauce, ¼ cup runny honey, 1 tbsp apple cider vinegar
Add the pork chops to a sealable bag or air-tight container and pour over the marinade. Marinate for at least 30 minutes, up to 24 hours.

Heat up the barbecue to 450°F.
Place the pork chops on the hot grill and lower the heat to medium-low. Cook for 3 1/2 minutes on each side with the lid closed. The internal temperature should reach 165°F. Keep an eye on the flames to make sure the honey doesn’t burn too much. You want to get a char on the pork but not burn it.
Remove from the heat and let rest for a few minutes.
Serve with your favourite sides.
