  • ½ cup six bean mix
  • ½ cup uncooked quinoa
  • ½ red bell pepper
  • ½ can corn
  • 2 tbsp G&K sriracha lime dressing
  • 2 green onions
  • Salt and pepper to taste

Instructions
 

  • Add the quinoa to a microwave-safe dish with 1 cup of water and a pinch of salt. Cook in the microwave for 20 minutes on 50% power. Alternatively, cook on the stovetop according to the package instructions.
    ½ cup uncooked quinoa
  • While the quinoa is cooking prep all of the other ingredients, wash and finely dice the red pepper and green onions. Only use the greens of the onions.
    ½ red bell pepper, 2 green onions
  • Next, open and drain the beans and corn and rinse with cold water.
    ½ cup six bean mix, ½ can corn
  • If you don’t have any dressing on hand make it now.
    2 tbsp G&K sriracha lime dressing
  • Once the quinoa is cooked carefully move it to a large bowl and let it cool for about 5 minutes. Then add all of the remaining ingredients and stir well. Add salt and pepper to taste.

  • Serve on its own, with crackers or as a side to your favourite protein.
