Easy Vegetable Rice Recipe 
This light, flavourful and easy vegetable rice is the perfect side for your weekday dinner. It’s a two-in-one carb and veggie combo so you only have to worry about one side dish.

Add rice and 2 cups of water to a microwave-safe dish. Place it in the microwave for 20 minutes on 60% power.
1 cup long-grain rice 
Peel and dice the onion.
1/4 cup diced onion 
Add oil to a large pan and warm on medium heat. Once the oil is hot, add the onions and sauté for 1-2 minutes until the onion begins to soften.

Add the frozen vegetable medley and sauté for another 2 minutes.
1 cup frozen vegetable medley 
Add 1 tsp bouillon powder and 1/4 cup water to the pan. Cook for 5 minutes until the vegetables are cooked through.

Remove the pan from heat and add the freshly cooked rice to the pan. Toss everything well until combined. Add salt and pepper to taste.
