4-Minute Breakfast Sandwich Recipe

The quickest breakfast sandwich you’ll ever make, and minimal dishes to wash! You won’t even be upset that you don’t have time for the drive-thru because it’s better than takeout.

Equipment

  • Toaster
  • Microwave
  • Small microwave-safe bowl

Ingredients
 
 

  • 2 eggs
  • 1 Bagel
  • 1 tsp milk
  • Pinch of salt and pepper
  • ½ tbsp green onions

Toppings:

  • Butter
  • tomato
  • Avocado

Instructions
 

  • Place the bagel in the toaster, on the bagel setting if you prefer.

  • In the small bowl, crack two eggs. Add the salt, pepper, milk and green onions. Whisk until well combined.
    2 eggs, 1 tsp milk, Pinch of salt and pepper, ½ tbsp green onions
  • Place the small bowl with eggs in the microwave for 2 minutes.
  • While the eggs and bagel are cooking and toasting, prep your toppings. I sliced some tomato and avocado. You can also add spinach, cheese, red onion, your favourite hot sauce.

  • CAUTION the bowl with the eggs will be very HOT! Use oven mitts or a pot holder to take it out of the microwave.
  • When the bagel is ready, butter one side. Add the eggs, tomato and avocado. I like to add a little more salt and pepper on top and you’re all set. Wrap in a napkin and take it to go or eat it right on the spot. Just we bare, those eggs will still be very hot! Enjoy!
